Sure, you can eat mono-meals—mangos for lunch, melon for dinner—but what if you’re lazy AND you love “real foods”? What if you like decadent raw desserts like lemon meringue pie, carrot cake or chocolate pudding—but don’t have an extra 4-15 hours of prep time? What if you crave Mexican rice, salmon, or sushi? Does that mean you’re willing to spend 3 hours in the kitchen? I think Steve Pavlina put it best when he said, “Just because I’m a raw foodist doesn’t mean I want to become a gourmet chef.”
And that’s just the food prep side of things! Raw food diets really do demand some education—especially if you want to avoid complications down the road. As an Intuitive Life Coach who happens to be a successfully Lazy Raw Foodist, I receive a lot of requests for recipes:
“These taste just like oatmeal raisin cookies! You must have spent days preparing them.” I giggle, because you see, I really don’t do difficult food prep. I also don’t live on mono-meals. Nor do I eat out all the time—although I have been known to do so if synchronicity cooperates.
Mostly, I just love raw food, and I take particular pleasure in finding ways to make it delicious, sustainable and above all else: easy.
My blood tests always score in optimal range, even without following a careful diet, so clients and students keep asking how they can have this much fun without the learning curve. I coach artists, writers, chefs and visionaries—people who sense the raw lifestyle would provide loads of clarity, creativity and vitality … if only they knew how to avoid pitfalls and temptations. Having lived high raw vegan since 2004, I’ve found my own way, but I’ve also helped others find ways that work for them.
So many folks continue to ask me for raw food recipes and advice that I recognized a need for very busy people to access easy yet fun ways of manifesting a raw lifestyle. Yes, I said manifesting, because it’s not just about the food. “Living raw” fosters our latent abilities to create the life we want—including access to the most delectable and healthy treats imaginable. One person’s “lazy” is another’s “effortless abundance” … and this e-book helps you to receive just that.

Pritikin Blueberry Muffins

Blueberry Muffins
1 (12-ounce) package frozen blueberries, unthawed
1 1/2 cups whole-wheat flour
1 cup unbleached white flour
1/2 cup bran flakes
1 tablespoon baking powder
1 1/2 teaspoons baking soda
2/3 cup nonfat milk (liquid)
1/3 cup nonfat yogurt
1/4 cup frozen apple juice concentrate
1 tablespoon vanilla extract
4 egg whites, beaten to stiff peaks
Toss the blueberries with 1/2 cup of the whole-wheat pastry flour; set aside. Combine the remaining dry ingredients in a large bowl. Stir the milk, yogurt, apple juice concentrate and vanilla into the dry ingredients. Fold the egg whites into the batter, then fold in the blueberries.
Pour the batter into nonstick muffin tins, lined with paper cupcake wrappers if desired. Cover with a dome of aluminum foil. Bake at 425 degrees for 25 minutes, removing the foil cover for the last 5 minutes. Cool the muffins, replacing the foil cover to keep them moist. Store in an airtight container.
Makes about 24 muffins.
Pritikin Muffins - Apples - Lemon - Cherries

Pritikin Muffins
Ingredients
4 egg whites
3/4 cup skim milk
1/2 cup non fat yoghurt
1/4 cup apple juice concentrate
2 apples; peeled & chopped
1 lemon; grated rind of
1 cup drained morello cherries
1/2 cup sultanas (golden raisins)
Instructions
Dry mixture
1 1/2 c wholemeal flour
1 c rolled oats
1 c oatbran
3 ts baking powder
1 1/2 ts cinnamon
Preheat oven 350°F & prepare pans. Thoroughly beat together the egg whites, milk, yoghurt & apple juice, then mix in the apples, rind, cherries & sultanas. Combine the dry mix & then fold into the wet mix. Spoon into pans & bake for 25-30 mins.
Makes about 12 Servings
