i eat eggs and dariy products..
i run track so i normally am too tired to cook dinner. and i never have time in the morning to cook a balanced breakfast and lunch. :/

My question again was about diet cooking tips and there have been some great answers

    You need to wake up earlier, and go to sleep earlier. You may also be anemic (iron, B-12) and have no energy to do it.

    Use a crockpot. YOu can put on a pound of dry beans or peas while you’re gone for the day, and come home to a hot supper, and have leftovers for lunch the next day.

    You can cook a pot of rice adn eat on it for 2-3 days, microwaving it to heat it up.

    start picking up tofu and making quick tofu scrambles in the morning. it takes like, 5 minutes tops. For lunch, a faux turkey sandwich is quick and easy, and for supper, try making a stir fry with egg noodles and assorted peppers and other brightly coloured vegetables.

    Eat yogurt sprinkled with granola and a hard boiled egg for breakfast- no cheating. Keep hard boiled eggs in the fridge and even if you get the drinkable type of yogurt, eat this everyday.
    Eat a salad and fruit for lunch- some type of beans in the salad and a grain–I like rice salad with black beans, corn, salsa, mayo and cilantro. OR premake falafal patties (from the box mix) and keep in the fridge in a plastic container with paper towels in between, and pack with pita, hummos, and salsa.
    For dinner, something high in protein, try a tofu based entree or omelette.
